Peach FuzzStreet Eats Live

How our Palisade food truck works One truck, a short menu, a lot of peaches.

Peach Fuzz is a mobile kitchen built into a retired bread-delivery step van. We cook everything to order at the window and prep at our commissary on G Road.

How a bread truck became a bao truck

The truck started life delivering bread around Mesa County. It was gutted, fitted out as a full kitchen with a grill, fryer and steamer, and painted the color of a ripe Redhaven peach.

The menu stays short on purpose: bao, hot honey chicken, street sides, lemonade and cobbler. Short means fresh, and it means the window moves quickly even when the line is long.

Every morning starts at the commissary, where the buns are steamed and the glazes are made. Then the truck rolls out to the day's stops, from the Kokopelli Trailhead in Loma to wine country on East Orchard Mesa.

How we cook

  1. Local when it's in season

In summer we buy peaches, honey and corn from Grand Valley growers whenever the harvest allows.

  2. Fast, never rushed

Everything is cooked to order, so your food comes out of the window hot.

  3. Leave it cleaner

We pack out our trash and pick up around the stop before we roll.

Come say hi at the window.

The truck moves every day. The live tracker always has the latest stop.
